A low-carb recipe for cauliflower rice with vegetables, asian flavors, and fresh pacific salmon. Cauli-rice is a great alternative to regular rice.
  • Large non-stick skillet or wok
  • 1 Tablespoon Olive Oil or Sesame Oil
  • Cauliflower Rice (2 cups)
  • ½ cup Mixed Vegetables of your choice. (I like broccoli, diced carrots, and peas)
  • 1 Egg
  • 1 Teaspoon minced Ginger
  • 1 Teaspoon minced Garlic
  • ½ Tablespoon Sesame Seeds
  • 2-3 Tablespoons Low-Sodium Soy Sauce
  • 1 cup of Chopped Salmon
  1. If you don't have access to Cauliflower Rice at your local Costco (were I find it), you can easily make your own. Steam cauliflower until fork tender, and chop in a food processor until it resembles the consistency of rice.
  2. If you are following a super low-carb diet, please leave out the carrots and peas. They are higher in carb count than other veggies.
  3. Start with a non-stick pan on medium. Let the pan get nice and hot before you do anything. This will take 2-4 minutes depending on your stove.
  4. Pour the oil into the pan and then drop in the chopped veggies of your choice. (They should be bite-sized)
  5. Let them cook for about 2-3 minutes. You don't want them too soft, or they'll turn mushy when you add the soy sauce.
  6. Add the Ginger and Garlic. Stir to combine, and cook for 1 minute.
  7. Add the Cauliflower Rice. Cook for 2 minutes.
  8. Push everything to once side of the pan, and add a scrambled egg to the side of the pan without ingredients. Stir the egg until fully cooked, and then reincorporate into the mixture.
  9. Turn up heat to Medium-High.
  10. Add the Soy Sauce, and sprinkle in the Sesame Seeds.
  11. Cook for another 1 minute.
  12. Remove from heat and serve immediately!
